Ingredients:
10-12 Brinjals/ Vangi
3 Onions chopped
1/2 cup grated coconut
1/2 cup coriander
12 cloves of Garlic
1/2 inch Ginger
1/2 tsp Jaggery
Salt to taste
2 Green Chillies
2 tsp crushed Groundnuts
1 tsp Mix Masala
1/2 tsp Garam Masala
1/4th tsp turmeric powder
3-4 tbsp Oil
1 tsp Mustard Seeds
1 tsp Cumin Seeds
Method:
- Heat oil in a pan. Add mustard seeds, cumin seeds, coriander leaves, turmeric powder, chopped onions and mix everything well. Add salt and cover the mixture with a lid.
- Slit the brinjals and keep them in water.
- Add mix masala, jaggery, garam masala, grated coconut, coriander leaves and some water. Mix all the ingredients well and cover the mixture with a lid and let it cook for few minutes.
- Fill the brinjals with coconut-coriander-green chillies-ginger-garlic mixture. Add the brinjals into the gravy. Cover it with lid and let it cook for 10-15 mins. Enjoy Bharli Vangi with chapati or bhakri.
