Hello and Sat Shri Akal to our amazing subscribers!
Back at it with the cooking videos!! Since you all love these so much, we figured while we are stuck at home in self isolation, why not try make one of Abbey's favourite sweets (since she can't go buy her pregnancy cravings anymore) at home! Also, since we don't live with Money's mum she is not in this one, but we hope you enjoy our first attempt at making jalebi; these actually turned out perfect!! The recipe is listed below:
RECIPE:
Ingredients:
2 cups of sugar
3 cardamom pods
1 cup of water
1 teaspoon of lemon juice
Couple of pinches of orange food colouring
1 cup of white flour
2 tablespoons of corn flour
1/4 cup of yoghurt
1/4 teaspoon of baking soda
Oil to fry jalebi
Firstly, heat up a pan with the sugar, water, and cardamom seeds and let boil until fully dissolved as shown in video, where the mixture should make a little string in your fingers indicating it is done, then add in lemon juice and a tiny pinch of the orange food colouring, and set pot aside. This will be the syrup to rest your jabelis in.
Next, add the flour, corn flour, yoghurt, baking soda, another pinch of orange food colouring, and mix until it has a crumb like consistency. Then, add in between 1/3 - 1/2 cup of water to the mixture, until it has a semi runny consistency, this is easiest to mix with your hands to ensure there are no lumps in the mixture at all, and it should have the same look and feel as pancake batter. Then, leave this to rest for 10 minutes. In this time, get a frying pan and heat up oil (enough to fry the jabelis), and once the 10 minutes is completed, put the batter mixture into a bottle or something to squeeze it into the pan with, and test a tiny amount of mixture into the oil to see if it is hot enough (if it is it will fry and float to the top). Then, swirl your jalebis into the oil, let cook until puffed, and soak in the syrup for 30-40 seconds to let it infuse, and then set aside on a paper towel or drying rack. Repeat these steps over; and your jalebis are done!
