INGREDIENTS
1/4 lb bacon
1 lb seasoned bulk sausage
1 lb smoked sausage links
1 can red kidney beans,drained
1 can white Great Northern beans,drained
1 16 oz. can stewed tomatoes
2 carrots,thinly sliced
2 ribs celery,sliced
1 minced garlic clove
1 TBS. fresh parsley
1 Tsp. dried basil
In Dutch Oven,cook bacon over medium heat until crisp.Drain on paper towels and crumble the bacon. Set aside for topping.
Discard all but 1 TBS. of drippings.Add bulk sausage in pieces and saute until brown,stirring frequently to break up sausage..Drain well. Add sliced sausage links and saute briefly.Drain well and add both cans of beans,tomatoes with the juice,carrots,celery,garlic,parsley and basil.Mix well and simmer 20 minutes or until carrots test tender.Serve in large soup bowls with crumbled bacon as topping. If I'm planning to freeze some of the cassoulet ,I only cook a few bacon slices and repeat when I serve it again. ENJOY!
